Expanding Culinary Creativity

 I have posted before that for me creating healthy and enjoyable meals for family and friends is a passion.  About six months ago, I started a weekly intention of something I simply call, “Sunday Supper.”  It is truly a throwback to what I believe many of you experienced in your childhood when the family would get together for a home cooked meal on Sundays, share an early dinner and just hang out watching sports or movies, and mostly just catching up on the past week and the week ahead.  Although I did not grow up with this special tradition, my husband Dan did, and so in homage to his legacy and also because I want to share and pass this tradition on to my daughter, I started the “Sunday Supper” custom in my home.
Usually on Sunday mornings I wake up with an idea in mind for the menu.  Recently I have been using this amazing non-toxic cookware from 360 Cookware that I love because of its non-toxic benefits but also because of the slow-cooking element that enhances the essences of vegetables, meats, fish and anything else I am preparing. As the weather has turned cooler, I have made some delicious soups, some inspired by restaurants where I enjoyed  them.  For instance, on a recent trip to New York I enjoyed an orzo and lemon chicken soup.  I recreated that soup and also the dill-focused salad dressing (thank you to my niece for finding the recipe) and salad.
 
I am also delighting in making fruit tarts filled with yummy seasonal fruits. I make a gluten-free almond crust then add delectable fruit fillings and serve with fresh whipped cream that is made with coconut cream.  Everything is gluten-free and dairy free.  What is especially exciting for me is the expansion of my culinary creativity into the world of desserts.  You see, I really never made desserts (my daughter is the dessert queen).  
 
The launch of my “Sunday Supper” shared with my family and friends, as well as my exploration of new creative culinary adventures has brought tremendous joy to my life this past year, and I am looking forward to many enjoyable meals ahead in the new year. Perhaps you too will start a new creative tradition that brings you joy in the new year?  I hope so.
